A milk & fruit juice pasteurizer is a specialized food processing equipment designed to eliminate pathogenic and spoilage microorganisms in liquid products such as dairy milk, plant-based milk, fresh fruit juice, and milk-juice blends. Rooted in the pasteurization principle developed by Louis Pasteur, it balances food safety with nutritional preservation by applying controlled low-temperature heating, making it indispensable for beverage manufacturers ranging from small-scale artisanal producers to large industrial facilities.
Core Working Principle
The pasteurization process follows a three-stage cycle—heating, holding, and cooling—to ensure microbial safety while retaining product quality:
1. Heating Stage: Raw materials are pumped into a plate or tubular heat exchanger, where they are indirectly heated by steam or hot water to precise temperatures. Typical parameters include 72°C for 15 seconds (HTST, High-Temperature Short-Time) for dairy milk, and 88°C for 1 minute for fruit juices (adjustable based on pH levels and product viscosity) .
2. Holding Stage: The heated product flows into insulated holding tubes or tanks, maintaining the target temperature for a preset duration to fully inactivate harmful bacteria like Salmonella and E. coli without damaging heat-sensitive nutrients or natural flavors .
3. Cooling Stage: Post-holding, the product undergoes heat recovery by exchanging thermal energy with incoming cold raw materials, then is rapidly cooled to below 4°C via an ice water circulation system. This rapid cooling inhibits residual microbial growth and preserves product freshness.
